Tallgrass Provisions
Tallgrass supplies dry goods — flour, pulses, salt, sugar, spice — to about four hundred independent bakeries and kitchens across the middle of the country. This is the screen the four people who run that look at first thing. It answers one question before anyone has had coffee: what went wrong overnight, and who is waiting on us. Everything else lives in the warehouse system.

Needs attention
Semolina is short until the 14th
The mill has us on allocation at 60% of standing orders. Do not confirm new semolina lines past the 14th without checking with Ines first. Six accounts are already partial — they know, and they have been told the date.
Overdue balances are drifting
The over-30 column has gone up three weeks running. Most of it is two accounts, both of whom pay eventually and both of whom have stopped answering email. Someone should phone them rather than send a fourth statement.
New pallet labels from Monday
The barcodes move to the top-right corner. The old labels still scan, so there is no rush to use up the stock in the pick office.
